The Magdonal Family opened Sabor & Sazón, an upscale international restaurant on August 23rd, 2024 in downtown Paso Robles. Sabor & Sazón loosely translates to "flavor and seasoning" however it's the secondary meaning of Sazón (essence) where our culinary journey comes to life, sharing the passion and dedication that goes into every dish we create.


Our restaurant is more than a dining destination – it's a place where memorable meals are crafted with passion, and where you'll discover the perfect blend of outstanding cuisine and heartfelt service that keeps our valued guests coming back to share in our culinary story.

Executive Chef

Jorge Magdonal began his career early in the kitchen at the age of 16 at the acclaimed 'Giorgio' in Malibu, California under the mentorship of Chef Giorgio Baldi. Here is where his affinity for southern Italian cuisine began as well as his respect for tenacious hardwork. He worked at countless restaurants in the thriving LA food scene for years including Gladstones in Malibu and the Marmalaide Cafe. He then moved his family to Paso Robles in late 2008 to help open his brother's Italian restaurant Il Cortile and Spanish eatery La Cosecha, gaining a genuine appreciation for the area's hospitable community and bountifulness.


Jorge's philosophy in the kitchen is to use fresh and local ingredients when available to reimagine dishes from all over the globe. Chef Jorge is constantly learning new dishes and applying his 30 years of experience to recreate a meal guests will remember.


At Sabor & Sazón, Jorge takes great pride in hand-making the pastas and sauces from scratch to harmonize the best flavor out of every dish. Overseeing the kitchen operations daily, he wants every guest to experience the love, passion, and dedication he and his family pour into their dream.
